Best Ever Muffins

This is the easiest muffin recipe ever. It only requires one bowl and 10 minutes of prep time. It can be even faster if you stir fast. These muffins can be either sweet or savory depending on what you add. For those of you in the Eastern time zone you can make your muffin for lunch. 

Ingredients:

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 1 egg
  • 1 cup milk
  • ¼ cup vegetable oil


Directions:


Preheat the oven to 400 degrees. And grease or use paper liners in a 12 cup muffin pan. Stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl or a 2 cup measuring cup, beat egg with a fork and stir in milk and oil. Add to flour mixture and stir lightly with a fork until mixture is just moistened. The batter will be lumpy. Now is the time to add anything you like..fresh or frozen fruit, raisins, nuts, cheese, chopped precooked bacon from Costco, even a spoon full of jam on top of the muffin works. Bake for 25 minutes. 


Now pour yourself a cup of coffee, add a fresh, hot muffin and get ready to chat with your ALA friends.
